Old vines of the Zibibbo variety, planted on our estate in the 1970s, are carefully tended to produce a zesty wine. Grown from the single vineyard fruit on ancient sheet limestone with red desert sand overlay. The low yielding fruit was cold bag pressed, cold settled and racked into ferment. A small portion was influenced by seasoned French oak. The majority was tank fermented to retain varietal freshness. 2019 Vintage withstood some hot, dry conditions resulting in lower than average yields and minimal disease risk. This concentrated flavours is evident in the wine which also is grown on old vines of 43 years old. Light white gold shimmer. The aroma displays intense passionfruit and musk with hints of blossom. The palate is alive with rose petals, tropical fruits and citrus. The silky palate texture has a crisp minerality,balanced with velvety length and zippy finish. Recommend pairing along side freshly baked porcini mushroom and pesto pasta, soft shell chili crab and curries or passionfruit ice-cream and seasonal fruits.
